Green Chile Cheese and Veggie Frittata
4 eggs, beaten
½ Bell Pepper (red, green, or yellow – depending on your taste)
Cholula Sauce or hot sauce of your choice
About ½ C shredded cheese (It can be any kind you like)
In a non-stick pan, melt a little butter on a low-medium heat. Add the eggs to the pan and season with a little salt and pepper to taste. Take a spatula and begin pushing in the edges of the cooking egg, allowing more raw egg to come into contact with the pan. When eggs begin to have some volume, begin adding the ingredients on top of the eggs. (If you want to add some meat or other veggies, do that now.) Sprinkle grated cheese on top and put pan under the broiler in oven until cheese melts and eggs become firm. Remove, cut into serving pieces and enjoy! For additional flavor, spoon a heated green chile & tomatillo sauce over top!
