Tomato Mozzerella Salad

 

There’s nothing more refreshing and tasty as this simple Tomato Mozzarella Salad. It’s a great compliment to any meal. Best of all, it’s fast and easy to prepare, naturally gluten-free and good for you!

Ingredients:

2-3 fresh medium tomatoes, sliced

fresh mozzarella cheese (the soft kind), sliced

1/4 c balsamic vinegar, approximately

1 Tbsp olive oil, more or less (I go for less)

1 tsp REAL maple syrup, honey, or sweetener of your choice

A sprinkle of onion powder, to taste

fresh basil leaves, if desired

Slice the tomatoes and mozzarella cheese and place them alternately on a plate or in a shallow dish. (I have little bowl-plates I like to use.)  In a small mixing cup or bowl, combine the balsamic vinegar, the syrup, olive oil, and onion powder and blend together with a wire whisk or stick blender.

Pour over the tomato and cheese slices. Add a few fresh basil leaves, if desired.  Allow to marinate for 15-20 minutes before serving.

This is a great dish to take to any type of gathering. It works well as a great appetizer, too.

Got a bigger crowd? Simply double/triple the recipe as the above recipe serves 4…sometimes only 2! It’s that good!
