Easy, Savory Chili

 

Ingredients:

1 can white beans                                                          1 Tbsp red chile powder

1 can pinto beans                                                          1 tsp cayenne pepper

1 can black beans                                                          1 tsp onion powder

2 cans kidney beans                                                     1 tsp garlic powder

1 medium onion, diced                                               1/2 tsp cumin

1 medium bottle salsa                                                  1 can tomato paste

1 green bell pepper, diced                                          salt and pepper to taste

1 red or yellow bell pepper, diced                          enough water to achieve desired thickness

2-3 green chiles, diced or 1 can diced green chiles

1 can diced tomatoes with green chile

1 1/2 pounds ground meat, or diced cooked roast

 

In a stock pot, cook onion and bell peppers until soft and tender in a little oil.  Add the ground hamburger and brown it until cooked through. Add all the rest of the ingredients and simmer to meld all the flavors together for about 20-25 minutes.  Spoon into bowls and enjoy!

For Frito Pie:  serve chili with Fritos chips and shredded cheese as stir-ins.  If desired, add chopped lettuce, too.  This chili can be easily stored in secondary containers and frozen to enjoy later.
