Chocolate Crepe with Berries








1 egg

1/4 tsp cinnamon

1 packet sweetener of choice

1/2 tsp vanilla

sprinkle of salt

1 Tbsp cocoa powder


In a small mixing bowl, combine all the above ingredients and mix beat together with a fork until blended together.  Melt a little pat of butter into a non-stick saute pan or spray with a little non-stick spray.  Add the mixture to the pan and cook until edges are set enough to flip over.  Turn off heat and cover with a lid.

In the meantime,  soften up some chocolate cream cheese or other chocolate spread of choice and spread onto surface of warm crepe. Add sweetened berries of choice – blackberries, strawberries, blueberries or a mixture of all.  Spoon onto one half of the crepe, add a spoonful of whip cream (I keep canned whipped cream on hand.)  Fold crepe in half and top with a little whipped cream.  Enjoy!
