This is an easy salad to make. It takes a little prep time but is well worth it! The coconut shrimp are baked, not fried, and completely gluten-free! Best part…they are really good!
1 pound of raw, large shrimp – deveined
1/3 C cornstarch
1 tsp salt
3/4 tsp cayenne pepper
2 C flaked coconut (sweetened is optional)
3 egg whites, beaten until foamy
Preheat oven to 400 degrees F. Rinse and dry shrimp on paper towels. Mix the dry ingredients together and place in a shallow bowl – except for the coconut. Place it in a separate shallow bowl. Taking one shrimp at a time, dredge the shrimp in the cornstarch mixture and then dip into the egg whites. Roll the shrimp in the flaked coconut and place on a baking sheet that has been sprayed with non-stick cooking spray. Repeat until all shrimp are coated. Bake for 15-20 minutes, turning the shrimp over half-way through, until the shrimp is bright pink and the coconut is browned.
This make a great appetizer, too!
(I have used pre-cooked shrimp in a pinch. I just cook for half the time so that the shrimp isn’t over-cooked and dry.)
1 package of mixed greens of your choice (romaine, spring mix, etc.)
4-5 spears of fresh pineapple, cut into chunks
2 fresh kiwis, sliced
1 fresh mango, cut into chunks
2 fresh mandarin oranges, if available, or 1 can of mandarin oranges
1/2 c golden raisins or craisins, if desired
Rinse greens and pat dry or put into a salad spinner to get off excess moisture. Place greens into two shallow salad dishes. Divide all the fruit evenly and arrange on top of the greens. Top with the coconut shrimp. Serve with the dressing below and spoon onto salad to taste. (This salad can be easily adjusted up and down to suit you taste – i.e – the amount of greens, etc. Depending on how big or small you would like your salad to be, this can serve up to four people…two if this becomes a main dish.)
Tropical Salad Dressing:
1/4 C pineapple juice
1/4 C orange juice
juice from 1 lime
1 -2 packets of sweetener or a splash of honey/ maple syrup (whatever you like to use)
Sweeten dressing to taste. (You can leave the sweetener out, if desired) Spoon over salad to taste. Enjoy!
