Crepe With Fried Apples

This a crepe/pancake.  It is gluten-free and very quick and easy to make.  No mixes to buy!


1 egg

pinch of cinnamon

pinch of salt

1 tsp vanilla (about)

1 packet sweetener

1 tbsp buckwheat (is NOT wheat)  or coconut flour (or other gluten-free flour of your choice.)

Combine all ingredients in a small bowl and mix/beat with a fork until all mixed in.  Pour into a heated saute pan with melted butter or non-stick spray in it. Cook over med-low heat until bottom is firm enough to turn over. Continue cooking until crepe is set.

Fried Apples

Home-made Warm Apple Topping

1 apple, cored and chopped into bite-size chunks

dash of cinnamon

1 tsp real maple syrup or a sprinkle of brown or white sugar or even a packet of sweetener (Each gives the apples a slightly different taste.)

1 pat of butter

Melt the bit of butter in the same saute pan. Add the apples, sprinkle them with cinnamon and sugar of choice. Quickly stir them for just a few minutes only until the apples are coated and warmed through. (They should still be firm.) Pour apples onto the top of the crepe and add a dollop of whipped cream, if desired.  Enjoy! (Fried apples are good with ice cream for a quick evening snack, too!)

(This recipe can be easily increased to accommodate any number of servings.)
